In a large bowl, combine 1 cup (100 g) graham cracker crumbs and 1 tablespoon (15 g) granulated white sugar.

Press the mixture into a 6-inch (17-cm) diameter springform pan lined with parchment paper at the bottom and a parchment collar around the sides. Flatten it evenly and compress it tightly.

In a separate bowl, cream together 9 oz (250 g) cream cheese and 1/2 cup (100 g) granulated white sugar.

Mix in 1 large egg, 1/2 teaspoon (3 g) salt, and 1 tsp (5 g) vanilla extract.

Add 1/2 cup (140 g) sour cream and mix until smooth. For an optional step to prevent cracking, stir in 2 teaspoons (8 g) cornstarch (or an equal amount of flour).
