In a blender, combine garlic, olive oil, lemon juice, Dijon mustard, honey, Greek dried oregano, dried thyme, fine sea salt, and black pepper. Blend until smooth to create the marinade.

Clean the chicken thighs by trimming excess skin and removing any bone fragments. Place the chicken in a bowl and coat thoroughly with the marinade. Cover and refrigerate for 30 minutes to 24 hours.

Peel the potatoes and cut them into large chunks. Soak them in water to remove starch, then drain and dry them thoroughly.

Place the dish in the oven at 425°F for 10 minutes. Then, reduce the heat to 375°F and cook for approximately 50 minutes, or until the chicken reaches an internal temperature of at least 185°F.
