In a mixing bowl, whisk together 1 egg, 30 g granulated sugar, 1 g salt, and 1 tsp vanilla extract until the sugar dissolves.

Add 150 g yogurt and 60 g whole milk (or 200 g kefir) to the egg mixture. Whisk until well combined.

Stir in 135 g all-purpose flour and 3 g baking soda. Mix in one direction until a smooth, thick batter forms with no lumps.
