  1. 1

In a cast iron pan, fry 1 Pound of lean ground beef over medium-high heat until browned through.

    🔥 medium-high heat

  2. 2

Push the beef to one side of the pan and add 1/2 chopped onion, 3 cloves of garlic, and 1/2 julienned red bell pepper. Sauté for a couple of minutes until the aroma fills the air and peppers soften.

  3. 3

Mix the beef and vegetables together, then add 1 Cup of uncooked jasmine rice to the pan and cook slightly to brown the rice.

  4. 4

Reduce the heat and add 1 Tsp smoked paprika, 1/2 Tsp chili powder, 1 Tsp Italian seasoning, 1 Tsp salt, and 1 1/2 Tsp ground black pepper. Stir to coat everything evenly.

  5. 5

Stir in 1 Can of sweet corn, 2 Cups of beef broth, 1 Cup of Dr. Pepper, 1/2 Cup of smoky BBQ sauce, and 2 Tsp to 1 Tbsp of Worcestershire sauce.

  6. 6

Bring the mixture to a boil, then reduce heat, cover with a lid, and simmer for approximately 18 minutes until the rice is cooked through.

  7. 7

Once the rice is cooked, sprinkle 1 Cup of shredded old cheddar cheese over the top. Replace the lid and let it melt.

  8. 8

Garnish with 1 Tbsp of chopped parsley and serve.

Tips

  • Use original Dr. Pepper rather than diet to maintain the intended flavor profile.
  • You can experiment with different sodas like Coca-Cola or root beer.
  • Leftovers are often better the second day and the dish freezes well.
  • If the mixture looks dry, you can add an extra 1/2 cup of water (the recipe used 2 cups total liquid including the initial broth/soda/water ratio).
