- 1
Preheat oven to 160°C (320°F) or gas mark 3. Grease a 2-lb (900g) loaf tin and line with parchment paper.
💡 The pan is greased with butter and lined with parchment.

- 2
Zest and juice one large lemon. Set aside.
💡 Use a microplane or fine grater for the zest.
- 3
In a bowl, whisk 3 large eggs until light and fluffy (about 90 seconds).
💡 Use a hand or electric whisk.
⏱ 90 seconds
- 4
Whisk in the 380g (14oz) of condensed milk, the lemon zest, 155g (5 1/2 oz) of melted butter, and 6ml (1 tsp) of vanilla extract until combined.
💡 Ensure all the condensed milk is scraped from the tin.
- 5
Sift in 200g (7oz) of flour, 15g (1 tbsp) of baking powder, and 1/4 tsp of salt (omit if using salted butter). Gently fold the dry ingredients into the wet mixture with a spatula to avoid knocking out air.
💡 If using self-raising flour, just use 1 tsp of baking powder.
- 6
Pour the batter into the prepared loaf tin. Tap the tin gently on the bench to remove large air bubbles. Bake in the oven at 160°C (320°F) for 50 minutes.
💡 Check doneness with a skewer; if it comes out wet, bake for an extra 5 minutes.

Let the cake sit on a wire rack for 5 minutes. Poke holes in the cake, then drizzle the first half of the lemon juice over the sponge to soak in.
💡 Poking holes helps the juice penetrate the cake.
⏱ 5 minutes
- 8
In a separate bowl, whisk 140g (5oz) of icing sugar with the remaining lemon juice, adding liquid a little at a time until the desired consistency is reached.
💡 If it's too runny, add more icing sugar.
- 9
Remove the cake from the tin, place it on a wire rack over a clean tray, and drizzle the icing over the top.
💡 A clean tray allows you to scoop up any excess icing and pour it back over.
- 10
Allow the icing to set for about 20 minutes before slicing.
💡 The cake is ready when the icing is completely dry.
⏱ 20 minutes
Tips
- If using salted butter, omit the added salt in the batter.
- If using self-raising flour, reduce the baking powder to 1 tsp.
- A clean baking tray is important so you can reclaim runny icing for the top.
