Tender Pork Belly and Cabbage in Oyster Sauce

Pan fry the 1.1kg pork belly on high flame until toast marks appear.

Add 1/2tsp salt and ground black pepper to taste.

When toast marks start to appear, mix and flip the meat to the other side to continue pan frying.

When you see more oil coming out from the meat, add a bit of water and mix to lessen hot oil explosion and splatter.

Continue to pan fry on high flame until all sides have toast marks, then set the pork aside.

Set aside excess rendered fat, then saute the 2pcs chopped onions on high flame.

Add the 1head of chopped garlic and continue to saute on high flame for another 15 seconds.

Add the pan fried pork back to the pan and mix, continuing to saute on high flame.

Add 2Tbsp soy sauce and 6Tbsp oyster sauce, then mix to reduce the sauces on high flame while letting more fat render.

Let the meat pan fry in its own oil for deeper flavor, then add enough water to submerge the meat.

Mix to incorporate the toasted flavors from the pan, let it boil, then lower the flame and slow cook until the meat is soft and tender.

Once the meat is tender, add more water as needed, then reduce the liquid a bit more. When the liquid has reduced, add the 1/2 whole sliced cabbage and slow cook for 1-2 minutes.

Tips
