  1. 1

Wash the pork ribs thoroughly with diluted salt water.

💡 Prioritize ribs with smaller bones for more meat and tenderness.

  2. 2

Mix 1 liter of water with 1 tsp of baking soda until dissolved. Soak the ribs in this mixture for 40 minutes.

💡 Baking soda helps soften the meat.

    40 minutes

  3. 3

Rinse the ribs several times with water and dry them thoroughly using kitchen paper towels.

💡 Drying the meat helps the marinade penetrate better.

  4. 4

In a mortar, combine 30g shallots, 30g onions, 40g garlic, and 10g ginger. Grind until fine. Add 100g char siu sauce, 10g sesame oil, 30g rose wine, 20g soy sauce, 45g oyster sauce, 40g honey, 15g palm sugar, 2g five-spice powder, 20g sweet soy sauce, 3g MSG, 2g pepper, and 50ml water. Blend until smooth and creamy.

💡 If you don't have palm sugar, use white sugar.

  5. 5

Rub the blended mixture evenly onto the ribs. Wrap them and refrigerate for 2 to 3 hours or overnight.

💡 Turn the ribs once or twice during marination to ensure even distribution.

    3 hours

  6. 6

After 20 minutes of marinating, add 2–3 Tbsp of oil to the mixture. Let it rest for another 30 minutes.

💡 Adding oil prevents the ribs from drying out during grilling.

  7. 7

Arrange the ribs on a baking tray, slightly apart. Preheat the oven to 400°F. Grill for 15 to 20 minutes on each side, then flip and grill for another 10 to 12 minutes until golden brown.

💡 The ribs are done when they are evenly golden brown.

  8. 8

Open the oven and use any remaining sauce to brush the ribs for a beautiful shine.

💡 The char siu sauce will become sticky and delicious when slightly charred.

  • Baking soda softens the meat texture.
  • Drying the ribs before marinating helps flavors penetrate.
