- 1
Heat oil in a pot, pan, or wok. Add 1 tsp of cumin seeds and a few curry leaves, letting them infuse the oil for a few seconds.
💡 Coconut or mustard oil are great alternatives to sunflower oil.
- 2
Add the onion and the prepared turnip pieces to the pot.
💡 You can cut turnips smaller if preferred.
- 3
Cook the onion and turnip over medium heat for 4 minutes to get things started.
💡 The heat is kept fairly vibrant.
🔥 medium heat⏱ 4 minutes

Stir in 1 tbsp of garlic ginger paste and salt. Add fresh chili to taste.
💡 If you don't have paste, use freshly chopped garlic and ginger.
- 5
Add 1 tsp each of turmeric, coriander, chili, and cumin powder. Mix well.
💡 You can also use a pre-made curry powder instead of individual spices.
- 6
Add the 3 large tomatoes. Cook for about 5 minutes, stirring occasionally, until the tomatoes break down into a thick masala base.
💡 If the tomatoes don't release enough liquid, you can add a little warm or cold water.

Lower the heat to just above a simmer. Cover with a lid and cook for 4 to 5 minutes until the turnips are nice and tender.
💡 Tender timing depends on how you cut the turnips.
🔥 simmer⏱ 4 to 5 minutes

Turn off the heat. Remove the lid to let steam escape, then sprinkle with a pinch of garam masala and a handful of fresh cilantro. Mix and check for salt before serving.
💡 Garam masala is great for finishing the dish.

Tips
- The tomatoes serve as the base of the gravy; using ripe, juicy tomatoes is key.
- If the mixture is too dry, you can add a splash of water, but the tomatoes often provide enough moisture.
- Garam masala is a spice blend used to finish the dish for extra aroma.
