Chop the green onion stems into small pieces and cut the leafy parts into 2-inch sections. Set them aside separately.

Cut the onion into strips and prepare the bean sprouts by removing the ends.

Boil the fresh thick Chow Mein noodles in a pot of boiling water. Cook until slightly firmer than perfect, then remove from water.

In a hot pan with oil at medium-high heat, stir fry the onion for about 15 seconds. Add the bean sprouts and salt, then stir fry for about 1 minute. Remove everything from the pan.

Add a little more oil to the pan and lower the heat to medium. Add the green onion stems and sizzle them regularly until they turn golden brown.

Turn the heat back up to medium-high. Add the noodles to the pan and toss to mix with the onions. Pour the soy sauce, dark soy sauce, and sugar around the edge of the pan, then stir fry until the color is even.

Add the chicken broth to the pan and cover with a lid for about 2 minutes. If using finer noodles, you can skip the broth step and go straight to the next step.
💡 Only use chicken broth if using thick noodles.

Remove the lid. Add the cooked onion and bean sprouts back to the pan along with the green onion leafy parts, sesame oil, and black pepper. Toss everything together to finish.
Tips
- If using finer noodles, you can skip the chicken broth step and add the vegetables back in immediately after the initial noodle stir fry.
- For thick noodles, the broth and lid step helps cook them through while maintaining texture.
