    Slice the tomatoes into wedges (two or four pieces depending on size). Roughly chop two green chilies and slice the remaining chilies in the middle.

    Heat 1/2 cup sunflower oil in a karahi pan over medium-high heat. Add 1kg of lamb mince and 1.5 tsp salt. Break down the mince and cook for about 10 minutes covered on medium-high heat until the liquid is released and the meat is beautifully browned.

    Cover the pan and cook on low-medium heat for around 25 minutes to soften the tomatoes. Once the tomato skins start to separate, remove the skins from the mixture. If the mixture sticks to the pan, add a light touch of water.
