Heat olive oil in a large wok or saucepan over medium heat. Add the 500 g of lamb and cook for about 4 minutes until the meat starts to move.

Stir in the spices: 2 teaspoons coriander, 2 teaspoons cumin, 0.5 teaspoon cinnamon, 0.5 teaspoon green cardamom powder, 0.5 teaspoon nutmeg, 2 teaspoons salt, pepper, dried thyme, and black lemon powder. Followed by 135 g of tomato paste. Cook for 4 to 5 minutes on medium heat, stirring to cook out the tomato paste.

Add the can of tomatoes (roughly crushed) and a splash of water or stock. Lower the heat to just below medium and simmer for about 20 minutes until the lamb is soft.

Add the 2 cups of zucchini and 2 cups of bell peppers. Cook on just-below-medium heat for 5 to 6 minutes, or until vegetables are to your preferred crunch level.
