    In a bowl, combine the boneless chicken with 1 tsp salt, 1/2 tsp pepper, and 1/2 tsp ginger garlic paste. Rub the mixture into the chicken pieces.

    Add 4 tbsp corn flour and 2 tbsp all purpose flour to the chicken. Pour in a little water and mix until the chicken is nicely coated.

    Let the marinated chicken sit for about 30 minutes.

    Heat 3 tsp oil in a pan. Gently drop the chicken pieces into the hot oil and fry, tossing at intervals, until they reach a beautiful golden brown color. Remove the fried chicken and set aside.

    In a wide kadai, heat 3 tsp oil. Add 6 to 7 cloves of finely chopped garlic and 4 chopped green chilies. Add a few curry leaves and sauté on low flame for about a minute until aromatic.

    Add 1 tsp of ghee to the pan, then add the fried chicken pieces. Gently toss to mix everything well.

    Season the mixture with 1/4 tsp salt and 1/4 tsp pepper. Add a generous amount of chopped coriander leaves and mix.
