Preheat oven to 400°F.

In a large bowl, coat cauliflower florets in oil, then bake on a parchment-lined baking sheet for 20 minutes.

In a small bowl, combine breadcrumbs and yogurt well and set aside.

In a small pan, lightly toast coriander seeds and fennel seeds over medium heat, then grind them with a pestle and mortar or grinder.

In a large bowl, combine lamb, breadcrumb mixture, egg, 1 minced shallot, olives, ground coriander/fennel, red pepper flakes, 3 Tbs mint leaves, and salt. Mix with clean hands until evenly distributed.

Pour 2 Tbs light olive oil into a pan over medium heat. Form the lamb mixture into 1 1/2in balls and brown each side in the pan.

Move meatballs to the side. Spoon out excess oil until about 2 Tbs remains. Add the minced shallot to the empty area and saute until softened.

Add the tomatoes to the pan. Combine the meatballs and shallots, bring to a boil, then reduce to a simmer for 10 minutes.

In a medium saucepan, melt 1 Tbs butter and 1 Tbs light olive oil over medium heat. Add the cumin, turmeric, ground ginger, cardamom, ground cloves, salt, and pepper. Mix well and remove from heat.

Pulse cauliflower florets in a blender a handful at a time until they reach a rice consistency. Combine the cauliflower rice with the spice mixture in the saucepan.

Serve the cauliflower rice as a bed for the meatballs and tomato sauce, then top with mint leaves and feta or goat cheese.
