    Place the diced ash gourd in a pan with enough water to cover it, add salt, and 1 tbsp coconut oil. Switch the flame on to glaze the ash gourd.

    In a separate pan, cook the garlic, ginger, green chillies, and sliced onion with 1 tbsp coconut oil on the highest flame until onions are translucent.

    Add the spinach and coriander leaves with salt to the pan. Cook on the highest flame, pressing into the center, until the water evaporates and the greens are tender.

    Transfer the cooked greens to a plate and allow them to cool before blending into a fine, velvety paste.

    In a pan, toast the 1 tbsp seeds & lentils (cumin, mustard, split bengal gram, and split black gram) until they start to splutter, then add 2 tbsp coconut oil.

    Add the minced garlic and chopped ginger to the tempering, then add the chopped onion and cook on a medium-low flame until translucent.

    Add the chopped tomatoes and 1 tsp of the coriander & fennel seeds powder. Stir until the tomatoes are slightly firm but intact.

    Stir in the green spinach paste and the glazed ash gourd. Mix until the components come together.

    Pour in 1 cup of coconut milk and mix gently on a very low flame. Adjust salt to taste.

    Serve the curry with cooked quinoa and garnish with roasted sesame seeds.

Tips

  • For the spice powder: use equal quantities of coriander seeds and fennel seeds, roast them slightly, and then grind into a powder.
  • When cooking onions for the gravy, ensure they turn translucent but do not let them turn golden or brown.
  • The green paste is ready when the water has completely evaporated from the cooked greens.
