Preheat oven to 400°F. Line a jumbo or a 12-cup muffin pan with liners.

In a medium sized bowl, whisk together the flour, baking powder, cinnamon, ginger and salt. Set aside.

In a large bowl, whisk together the oil, eggs, brown sugar, vanilla and orange zest until well combined.

Add the apple sauce (or crushed pineapple) to the wet ingredients and mix until well blended.

Add the dry ingredients to the wet ingredients, then fold in the shredded carrots, raisins, shredded coconut and chopped pecans until just combined.

Spoon the batter into the liners, filling them up to 3/4 of the way. Bake in the oven at 400°F for 23-25 minutes for jumbo muffins (or 15-18 minutes for regular size muffins) until a toothpick inserted in the center comes out clean.

Allow the muffins to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Tips
- If you don't like raisins, you can omit them.
- You can substitute the chopped pecans with walnuts if you prefer.
